this 'TENRYU MATCHA'.
On the upper course of the Tenryu River in Shizuoka...
'TENRYU MATCHA' is grown on the foot of Minami Alps, on a high land nearly 600m above sea level, which is very close to the cultivation limit for tea leaves. It's been regarded that growing tea at such high altitudes is an impossible thing to do.
Once tea leaves are grown at high altitudes, the leaves produce better tastes and flavors.
This is because the temperature difference gets extreme as altitude increases.
Growing TENRYU MATCHA aims at natural farming which is against the conventional concept for producing matcha.
Only extra fine leaves, which are grown in the middle of Mother Nature with using the least fertilizers, are used to produce this TENRYU MATCHA.
This 'Zeitaku Cha-Soba' is made from the followings:
'Hikigurumi* buckwheat powder' made in Togakushi Village in Nagano, 'TENRYU MATCHA' made in Shizuoka, and 'the ice cold water from Zao Mountains'.
(Hikigurumi*: buckwheat grains ground by a stone mill without removing the shells before being ground. )
A tea master Mr. Ken Sasaki, the Grand Gold Prize Winner of 2009 and 2013, produced
this 'TENRYU MATCHA'. Considering both its color and flavor, 'TENRYU MATCHA' is the highest quality matcha which is made from Tencha tea leaves that are grown at 600m altitude, very close to the cultivation limit for tea leaves.
As much as 8g matcha powder is contained in 200g soba noodles (2 servings).
