Principles:

Modified atmosphere packaging (MAP) is a way of extending the shelf life of fresh food products. The technology subsitutes the atmosphere inside a package with a protective gas mix. The gas in the package helps ensure that the product will stay fresh for as long as possible.Food is different - so the gas composition is used to pack different food products. Red meat needs high oxygen to maintain the red colour, bread requires low oxygen to avoid mould and vegetables often need a three-gas mixture.
