    DESCRIPTION

    Angel Thermo-Stable Alpha-Amylase AHA-100D is a food-grade starch hydrolyzing α-amylase with high temperature and low pH stability derived from Bacillus licheniformis.

    Effect of pH

    The enzyme is stable in the range of pH5.0 to 10.0, and effective in the range of pH5.0 to 7.0, the optimum pH is in the range of 5.4 to 6.0.

    Effect of Temperature

    The enzyme own excellent thermostability, the optimum temperature is above 95℃, with most effective jet temperature in the range of 105℃ to 110℃. The enzyme maintains considerable activity at higher temperatures (110℃ or above).

    The product is suitable for all kinds of jet cookers, and able to prevent the production fluctuation from steam pressure instability.

    mechanism

    The enzyme is an endoenzyme that is able to hydrolyze the α-1,4 glycosidic bonds in starch, soluble dextrin, and low-polysaccharides under high temperatures. This enzyme is also able to quickly reduce viscosity of starch slurries to facilitate further handling and processing.

    Applications and Usage

    This product can be used in production of starch sugar, fermentation industries such as monosodium glutamate, antibiotics, citric acid, and amino acid. The recommended for optimum industry operation condition is temperature 95℃~100℃, whereas if steam jet method is used, temperature may increase to 105-110℃, pH 5.4 ~6.0.

    Usage:  

    Mix ingredients with water according to specification, adjust the pH, and add 0.25~0.3kg of enzyme to each ton of dry ingredient. If liquefying is done in a tank, heat the tank to 95℃-100℃ and hold the temperature for approximately 30 minutes.

    Whereas if steam jet method is used, heat steam jet nozzles to 105±5℃ and transfer to flash tank at about 105℃for 5-10min, then transfer to laminar flow tank, sustain 90-120min at 95℃ or until viscosity and DE value meet the production requirements.

    Storage

    The product if stored at 25 below, at least 12month shelf life, if under the 4~10 cold storage, shelf life is 18 months; under warranty, measured activity not less marked activity. Over shelf life, enzymes may decrease, but can still be used, usage should be increased accordingly.
