What is Shiitakecha?
Shiitakecha is unique Japanese traditional, flavorful powder drink which is made with dried shiitake mushroom.
We Japanese drink it as tea drink (Shiitake-cha (tea)), but it is full of shiitake umami (guanylic acid) and has salty taste, so we also use it as a seasoning for cooking.
(Thanks to rich umami, Shiitakecha is also effective for salt reduction.)
How to use Shiitakecha as seasoning
The simplest way is using Shiitakecha instead of salt. You can add saltiness and umami.
Dried shittake is used in Japanese cuisines as one of the ingredients needed to make dashi (Japanese soup stock). But the process of extracting dried shiitake dashi takes time and care.
Since Shiitakecha contains salt and umami from shiitake, you can substitute Shiitakecha for salt or dried shiitake dashi.
We will describe easy cooking recipe below.
Oden Shiitakecha style
Ingredients (4 servings)
1/2 daikon cut into thick round slices
1 carrot cut into thick round slices
1 package (about 250g) konnyaku (jelly-like food made from the starch of devil's tongue) , cut into 4 or 8 triangles
2 chikuwa (tube-shaped fish paste cake), cut into large chunks
4 ganmodoki (a fried bean curd cake with finely chopped vegetables in it)
4 musubi-kombu (knotted kelp)
4 hardboiled eggs
1.2 l water
4 tablespoons (about 24g) Shiitakecha
2 tablespoons soy sauce
2 tablespoons mirin (sweet sake)
Directions
1. Parboil daikon in rice-water (milky water resulting from washing uncooked rice. Rice water will get rid of bitterness and bad smell from daikon and the water also makes daikon beautiful white color. In the case you do not have it, put 1 tablespoon uncooked rice into water.) for about half an hour.
2. Parboil carrot, konnyaku, chikuwa, ganmodoki.
3. Boil the water and add Shiitakecha, soy sauce, mirin, and other ingredients. Let simmer until the vegetables are tender, for at least an hour, or more. The kombu should become quite soft.
