Technological Process
Fried Type:
Washing & Peeling→ Cutting into slices or strips→ Blanching and color protection→ Dewatering→ Frying→ De-oiling→ Flavoring→ Packaging
Frozen Type:
Washing & Peeling→ Cutting into slices or strips→ Blanching and color protection→ Dewatering→ Frying→ De-oiling→ Quick Freeze→ Packaging
Equipment Configurations
- Washing & Peeling Machine: With emery or brush inside, it is used to wash and peeling the potato. Besides potato, it also can be used in other root plants, such as sweet potato, cassava, carrots, radish, taro and other fruits, such as banana.
- Cutting Machine: Cut potato into slices, strips or cubes as required size. Besides potato, it also can be used in other root plants, such as sweet potato, cassava, carrots, radish, taro and other fruits, such as banana.
- Rinsing Machine: Wash the shaped potato and rinse out the mucus and starch in the surface of potato.
- Blanching Machine: Blanch the shaped potato to restrain the oxidation process and ensure the color brightness. The additives can be added in this process.
- Dewatering Machine: Centrifugal type dewatering machine. Drain the water in the surface of potato chips or strips for preparation of frying. Dewatering process will shorten frying time to improve working efficiency and improve taste.
- Frying Machine: Frying the potato chips or French fries with oil-water mixing technology.
- De-oiling Machine: Remove the oil in the surface of fried potato chips or French fries to ensure they are tasted good and healthier.
- Flavoring Machine: It is needed in fried type potato chips or French fries, which is used for seasoning. It’s optional for the user.
- Quick Freezer: It is needed in frozen type French fries process line, which is prepared by user.
- Packaging Machine: Vacuum pack with nitrogen. Filling nitrogen in the package will prevent broken of fried potato chips and extend shelf life. Filling nitrogen, packing and coding will be finished at the same time.
