Lactic acid is a colorless liquid, and industrial products are colorless to light yellow liquid. Odorless and hygroscopic. It can be miscible with water, ethanol and glycerol, insoluble in chloroform, carbon disulfide and petroleum ether. Melting point 18°C, boiling point 122 °C15 mm Hg(lit.), density 1.209 g/mL at 25 °C.

Lactic acid is a widely used organic acid, which can be used in brewing, leather, cigarettes, chemical industry, food, printing and dyeing.

The use distribution of lactic acid in Japan is roughly: about 20% for brewing, about 50% for food, about 10% for lactic acid derivatives, and about 20% for industrial uses such as leather. The distribution of uses in our country is much the same.

1. Brewing industry The brewing industry uses about 80% lactic acid. The addition of lactic acid can prevent the propagation of hybrid bacteria, promote the development of yeast, prevent the turbidity of wine and strengthen the flavor of wine, and also improve the yield of wine.

2. Food industry The food industry generally uses lactic acid with a content of 50%. It is mainly used in lactic acid drinks, refreshing drinks, pastries, pickles and sour agents. Lactic acid can make foods slightly acidic without obscuring the natural flavor and aroma of fruits and steamed vegetables. Therefore, it is widely used in canned foods such as tomatoes, olives, pickles, and cabbage, and sour milk drinks made of lactic acid bacteria are also very popular.

3. The lactic acid content for leather industry is 40%. It does not have high quality requirements for lactic acid, dark and smelly can be used, the leather industry mainly uses it to remove the lime in tanned leather, also called deashing, the quality of the leather after de-ashing with lactic acid is better than other acid de-ashing quality, and it is also necessary to treat advanced leather with lactic acid. In the production of cigarettes, lactic acid can be used to remove impurities in tobacco and remove bitter and spicy taste, so the grade of low-grade tobacco can be improved by lactic acid treatment. Lactic acid is used as a pH control agent in the production of celluloid coatings. In the wool spinning industry, it is used for prechrome mordant dyeing of dyes to reduce the chromate content of wool and prevent the oxidation of fibers. In the post-treatment of silk and rayon, it is used as a pH regulator for brightening treatment to increase the color of yarn. When sodium lactate is used as seasoning agent, it is used in the production of casein plastic whitening agent, antifreeze, moisturizer and medicine. Calcium lactate can be used as a nutrient enhancer. Ferrous lactate is used for food fortification and medical treatment of iron deficiency anemia. Lactate esters, including methyl ester, ethyl ester, butyl ester, etc. are used as solvents, flavoring agents, etc. Lactic acid and its sodium salt, calcium salt and other derivatives are non-toxic and safe food additives. Stearyl lactate is used in emulsifiers and baked goods; Sodium lactate for intravenous injection; Synthetic lactic acid is used instead of naturally fermented lactic acid in cheese and other dairy products to acidify and curdle milk or cream.
