Instant coffee powder making process

Pre-treatment is to remove impurities from coffee raw materials. During the roasting process, the substances in the coffee beans undergo complex physical and chemical reactions to form unique coffee aroma substances. After grinding, the soluble ingredients in coffee are extracted into water at a certain temperature and pressure. Through the concentration and final drying process, instant coffee powder is produced.
The drying method is the forming process of instant coffee powder, and is also the process that has the greatest impact on the quality of coffee powder during processing. At present, the SD spray drying method is generally used. The first procedure requires the concentrated coffee extract to extract the water in the coffee. Afterwards, thermal energy drying or freeze drying can be used to produce coffee powder that can be dissolved in water. There are two current drying processes:
Drying process
1 Spray Dryer (Spray Dryer SD)
The SD spray drying method sprays the concentrated coffee extract through a hot gas jet. The heat can evaporate the water in the coffee extract, dehydrate and dry into powder. However, due to the strong thermal sensitivity of coffee aroma, it is very volatile at higher drying temperatures (there is already some volatilization during extraction and concentration). Therefore, SD spray-dried instant coffee does not have strong aroma of roasted coffee.
2 Freeze Dryer (Freeze Dryer FD)
The FD freeze-drying method is a dehydration technology that can maintain the sensory characteristics of coffee and maximize the shelf life of up to 30 months.
