What is red yeast rice extract ?

 

RYRE is a substance that's extracted from rice that'sbeen fermented with a type of yeast calld  Monascus purpureus.It's been used in China and other ASian countries for centuries as a traditional medicine. It's also used as a food coloring, additive,and preservative.

RTRE naturally contains several ingredients that may help control cholesterol levels.These include a number of monacolins,most importantly monacolin K.It also contains sterols,isflavones,and monounsaturated fatty acids,or"healthy fats".

 

Monascus colours:Monascus red coloring is Chinese traditional natural food coloring for meat products since centuries ago. It is obtained by mixing monascus with steamed rice, by method of liquid deep fermentation in controlled temprature, without adding any chemical additives. As it is natural and strong coloring ability, it is more and more widely ued in condiments, bakery, candy, etc.
