Light brown yellow liquid. Soya lecithin is extracted from soybean oil and is generally used as a natural emulsifier or stabilizer in various food applications. Soybean Lecithin is a combination of naturally-occurring phospholipids, which are extracted during the processing of soybean oil.
Application:
1.Baked food: Reduce the hydrophobic nature of flour dough, prevent ageing, bring back to life, improve expanding properties and lessen oil penetration.
2.Chocolate: Regulate viscosity, prevent surface efflorescence, increase smooth finish and shape preserving ability, and improve mouth solubility and mouth feel.
