Fish Collagen Introduction
Collagen is the most abundant protein in vertebrates. The genetically distinct collagen molecules in skin, bones, tendons, blood vessels, and corneas impart to these structures many of their special properties (e.g., the tensile strength of tendons and the transparency of corneas).
Collagen is composed of these left-handed polypeptide helices that are twisted around each other to form a right-handed superhelix. Type I collagen molecules, found in teeth, bone, skin and tendons, are about 300nm long and approximately 1.5nm wide.
The amino acid composition of collagen is distinctive. Glycine constitutes approximately one-third of the amino acid residues. Proline and 4 hydroxy-proline may account for as much as 15-30% of a collagen molecule's amino acid composition. Small amounts of 3-hydroxyproline and 5-hydroxylysine also occur.
