Maltitol is a kind of bulk sweeteners product created by hydrogenation of maltose which is obtained from starch. It has a pleasant sweet taste - remarkably similar to sucrose. Maltitol is approximately 80% as sweet as sugar, non-cariogenic, and with significantly less calories. Moltitol is especially useful in the production of sweets, including sugar chewing gum, chocolate, candies, cookies and ice cream.
Maltitol does not brown or caramelize as sugar do. Maltitol 's high sweetness allows it to be used without intensive sweetness. On the other hand maltitol has very similar physical characteristics to sugar, such as low hygroscopicity, solution viscosity, solubility, high melting point etc. These characteristics allow maltitol to completely replace sugar in recipes.
