A modern confectionery shop cannot avoid taking advantage of Blast Chilling techniques. Not only shock freezing at -18°C, but also Blast Chilling at +3°C, enable to work more efficiently, reduce preparation times, diminish storage space and increase food quality and safety.Thanks to the excellent performances of ChillRapid blast chillers/freezers, chilling cycles are quick but gentle, and guarantee perfect results for every confectionery product, raw or cooked, finished or semifinished.
For preservation of frozen products we suggest the use of our special TecnoControl storage rooms with active humidity control.

Blast Chilling PERFORMANCE:
Blast Chilling (soft or hard) lowers the food core temperature from 70°C to +3°C in less than 2 hours. Shock freezing Blast Chiller lowers the food core temperature from 70°C to -25°C within 3~4 hours. Chilling and freezing times will vary somewhat, depending on the food quantity, initial temperature, density, moisture content, specific heat, and type of container. The airflow has a high velocity, indirect pattern designed to cool all levels at identical rates. Time/temperature chilling and freezing rates meet or exceed all FDA and state regulations.

Blast Chilling CONSTRUCTION:
The chilling/freezing cabinet is constructed of polished type 304 stainless steel, with 2" of CFC-free, high density polyurethane insulation 120mm. The door is equipped with a removable magnetic gasket. The door is hinged on operator’s right.

Blast Chilling Refrigeration Unit :
The self-contained refrigeration system includes a condensing unit using R-404A refrigerant. The compressor is a semi- hermetic type with inherent overload protection.
The Blast Chilling Refrigeration Unit can be installed at the top on the
Blast Chilling (built-in type refrigeration uint)
or installed separate from the Blast Chilling ( split refrigeration unit , stand free )
Each Blast Chilling will with Trolley. Trollery size is 500X600X1400 mm

Blast Chilling temperature can fall down to -35 degree C (just accprding to the food feature and size) , it can be Auto-defrosting
