We applied our accumulated experience with knives and scissors to create an eight-step sharpening process and a 35-degree blade mounting angle for superb slicing performance

A knob on the back of the unit adjusts slicing thickness among seven gradients 

from approximately 0.3mm to 2.5mm.

Small remaining bits of vegetable can be sliced to completion using the holder while protecting fingers.
