5, beating
The purpose of beating is to remove the skin and seeds. Adopt double or three beating machine to carry on beating, the sieve
aperture of the first beating machine is 0.8 ~ 1.0 cm, the sieve aperture of the second beating machine is 0.4 ~ 0.6 cm generally.
The speed of the beating machine is generally 800 ~ 1200 RPM. Generally, the amount of slag obtained after beating should be
controlled at 4% ~ 5%.
6. Vacuum concentration
The methods of concentration are vacuum concentration and atmospheric pressure concentration. Because of the high temperature of
concentration, the color and flavor of tomato pulp will be decreased and the product quality will be poor. The vacuum
concentration used for the temperature of about 50℃, the vacuum degree of 670 mm hg above.

There are many methods of drying tomato concentrate, including freeze drying, puffing drying, drum drying, foam drying and spray
drying.
