Arabic gum is a kind of safe and harmless thickener, which is naturally solidified in the air. Light white to yellowish brown translucent block, or white to orange brown granular or powder, is a high molecular weight of 220000-300000 polymer electrolyte. Odorless, tasteless, flammable. In water, it can gradually dissolve into acid viscous liquid. After some time, the viscosity decreases, and the solubility is about 50% (w / V), which is insoluble in ethanol. Form a stable coagulation layer with gelatin or albumin. When precipitated with acid alcohol, free Arabic acid is obtained.

Performance
Due to the structure of Arabic gum with some protein substances and rhamnose, Arabic gum has very good hydrophilicity and lipophilicity, which is a very good natural oil in water emulsion stabilizer. However, the emulsification stability of Arabic gum from different tree species is different. The general rule is that colloids with high content of rhamnose and nitrogen have better emulsification stability.
