Sorbitan monostearate, also known as sorbitan stearate is synthesized by the esterification of sorbitan with stearic acid. It has a molecular formula of C24H46O6. At room temperature, it is in the form of a pale-yellow to yellow granular solid. It has an HLB value of 4.7. It has extensive uses such as, keeps moisture of yeasts; enhances oil-water dispersion stability; emulsifies and stabilizes in cosmetic, pharmaceutical, feeds, coating, textile formulations. It is commonly used in combination with polysorbate 60.
