PHYSICAL CHARACTERISTICS HEADS:



Heads must be clean with blood, liver and gut content removed. Cheeks must be attached. Napes should be attached. Foreign material is not permitted. Colour characteristic of species Texture firm to slightly soft Odour fresh sea odour to more or less odourless (neutral)



PHYSICAL CHARACTERISTICS OF H & G TURBOT:



Belly cavity must be thoroughly cleaned with bloodline, liver and gut content removed. Bruised flesh is not permitted. Chafing marks and scrubbed appearance is not permitted. Broken skin is not permitted. Foreign material is not permitted. T – Grade: Excessive chafing marks and scrubbed appearance is not permitted. Damaged fish may be cut to meet weight and physical requirementsre.

FREEZING/GLAZING:



Finished Product Frozen Temperature: -18 C (0 F or Colder) Fish must be glazed in fresh potable water prior to packing.
