Garri Fryer of Cassava Gari Processing In Ghana
1.The introduction of the Garri Processing Machinery :
1.1 Gari, which is granular flour of varying texture, is a widely patronised Ghanaian food item that has over the years served as a “good companion” to students at all levels - from primary school to the university - particularly those in boarding facilities.
1.2This is due to its relatively long shelf life. Gari is made from cassava which are harvested, peeled, grated, left to ferment and then fried in a dry pan.
1.3The grated pulp is then put into a jute sack which is tied or stitched and left to ferment for three to seven days.
This step is very important, as the fermentation process helps to reduce and detoxify the high cyanide content of the cassava. The sacks containing grated cassava are packed on each other with a wooden board placed below and above them.
The boards are tied together with the sacks full of the grated cassava in between. Tension is created by tightening the rope to allow fluid to drain from the grated pulp.
After this, the pulp is left for three days to dry. The fluid that is drained from the pulp is very rich in starch. It is collected into a basin and left to sediment resulting to pure raw starch.
The fermented and dried grated cassava is sieved to remove the large particles and other unwanted items and the smaller grains and collected for frying.
The frying process requires continuous stirring to ensure that the gari doesn’t get burnt and also turns out crispy.

5.How to enjoy garri?
5.1Gari can be enjoyed as a snack in cold water on a very hot day. It can also be cooked in hot water into a starchy paste, popularly called ‘eba’.
5.2There is ‘gari foto,’ which is gari sprinkled with a little water to soften, and then mixed with vegetable sauce, especially tomato stew.
5.3For students, gari is perfect with shito (black pepper sauce) and canned fish, such as sardines or mackerel
Again, many students mix gari with milk and/or chocolate (Milo) plus groundnuts as a snack.
In Ghana, boiled beans, known in Ga as “yoo” and gari; together called “yoo ke gari" is also very popular. This is particularly patronised by students and people in boarding facilities such as prisons.
