Dragon Fruit, also known as Pitaya, has a dramatic appearance, bright pink or yellow skinned (from Columbia) with green colored spine-like scales. The fruit is oval shaped, elliptical or pear-shaped. Inside, the flesh has subtly flavored sweet taste or sometimes slightly sour. The flesh is either white or red with black seeds dotted all over.
Dragon Fruit is popularly eaten raw and tastes better chilled. It is also served as a juice. The pulp of the fruit is used in
producing an alcoholic beverage. The fruit makes a wonderful cocktail on its own or mixed with other tropical fruits.

Store at temperatures of 20 - 24°C, fresh dragon fruit will last 8-10 days. Store at temperatures of 12 – 14*C will keep freshness in 15 - 20 days. However, fruit should not be stored at temperatures below 5°C for cold compromised, skin will appear brown spots, loss of aesthetic beauty.
