Mutiple step wash in clean water to remove the pieces of peel, sand, silt etc.

Grate cassava roots or slices properly in clean stainless steel grater to obtain uniformly smooth mash. The grated mash must be uniformly smooth without lumps.

The grated mash in sacks is pressed to remove as much moisture as possible. Pressing is completed when water is no longer dripping from the sacks.

After pressing the de-watered cassava mash is a solid cake which has to be broken up and sifted to reomve the large lumps to obtain an homogenous product. Uniform particle size is important because it makes for a more uniform drying of individual particles, smaller particles taking less time and less energy in drying.
