Konbucha

Konbucha is originally unique Japanese traditional instant drink, soup-like beverage which is made with kelp.

(Different from Ko”m”bucha, a fermented drink.)

We Japanese drink it as tea drink (Konbu(kelp)-cha (tea)), but it is full of kombu umami (glutamine) and has salty taste, so we also use it as a seasoning for cooking.

 

How to use Konbucha as seasoning

The simplest way is using Konbucha instead of salt. You can add saltiness and umami.

(Because rich umami brings satisfaction, Konbucha is effective for salt reduction.) 

Kombu is used extensively in Japanese cuisines as one of the main ingredients needed to make dashi (Japanese soup stock). But the process of extracting dashi takes time and care.

Since Konbucha contains salt and umami from kombu, you can substitute Konbucha for salt or dashi.

 

 

Ume-Konbucha

Ume-Konbucha is instant drink, one of Konbucha variation blended with Japanese pickled plum, Umeboshi(Ume) as accent to enhance flavor and taste.

Like Konbucha, you can enjoy it both as drink and as seasoning.

 

 

Green tea

Japanese “Green tea” is different from English “Green tea”. In Japan, “Green tea” refers to sweetened instant matcha powder drink,  and is different from “Green tea made from only tea leaves”.This Green tea dissolves in both water and hot water.

 

 

Shiitakecha

Shiitakecha is unique Japanese traditional instant drink, soup-like beverage which is made with dried shiitake mushroom.

Like Konbucha, you can enjoy it both as drink and as seasoning.
