What is Shiitakecha?
Shiitakecha is unique Japanese traditional, flavorful powder drink which is made with dried shiitake mushroom.
We Japanese drink it as tea drink (Shiitake-cha (tea)), but it is full of shiitake umami (guanylic acid) and has salty taste, so we also use it as a seasoning for cooking.
(Thanks to rich umami, Shiitakecha is also effective for salt reduction.)
How to use Shiitakecha as seasoning
The simplest way is using Shiitakecha instead of salt. You can add saltiness and umami.
Dried shittake is used in Japanese cuisines as one of the ingredients needed to make dashi (Japanese soup stock). But the process of extracting dried shiitake dashi takes time and care.
Since Shiitakecha contains salt and umami from shiitake, you can substitute Shiitakecha for salt or dried shiitake dashi.
We will describe easy cooking recipe below.
Tempura with Shiitakecha batter coating
Ingredients (2 servings)
100g flour
2 tablespoons (about 12g) Shiitakecha
1/2 eggwash
50ml water
2 green peppers cut lengthwise into two
100g maitake (only the very end of stalk cut off because too tough to eat) split lengthwise into two
100g thinly sliced pumpkin
100g sweet potato cut into 5 millimeters thick round slices
The moderate amount of flour for coating
1 teaspoon Shiitakecha
Directions
1. Preheat oil in a deep-fryer to 325 degrees F (170 degrees C).
2. In a large bowl, whisk flour, Shiitakecha, then add egg and water. With chopsticks, stir together lightly to suppress the formation of gluten and keep the batter a bit lumpy.
3. In another large bowl, toss the ingredients in a mixture of flour and Shiitakecha, shaking to remove any excess mixture.
4. Dip coated ingredients into the Shiitakecha batter to coat furthermore. Once battered, pick up and carefully put them into the oil so as not to overlap. Fry ingredients a few at a time.
(If you cook many, don’t try to overcrowd. Cooking in several batches will bring better result.)
(the Vegetables cook very fast, so watch them closely.)
5. Drain them on some paper towels and then serve. It is wonderfully delicious when it is freshly deep-fried and crunchy, so enjoy straight away when it's done!
