Sorting materials, cleaning

·The sorting of raw materials: choose the fruit of higher maturity.

·Cleaning: washing before squeezing raw materials is an important measure to reduce pollution, and it is more important for juicing fruit with skin. Therefore, we must use the fluid water to wash the sediment and impurities on the pericarp. In necessity, use potassium permanganate solution to rinse the raw material, and then water leaching.

Broken process demands every fruit ruptures, but the seeds and stem can not be crushed, or else the oil esters, glycosides substances and some substances of stems in the seed will increase the bitterness of the wine. The pulp and stems should be separated immediately after broken, to prevent the green grass taste and bitter substances of stem will dissolve out. Broken machine includes double roll crusher, drum scraper crushers, centrifugal crusher, hammer crusher,etc.

Residue and juice separation

·The juice flows out by itself without pressing after broken is called artesian juice. The juice flow out after pressing is called pressed juice.

·Artesian juice is of good quality, should be used to fermented separately to make high-quality wine. Pressing is processed in twice. At the first, press the raw material gradually, press as much juice as possible out of the pulp, the juice is of slightly lower quality, should be brewed separately, it can also mixed with the artesian juice. Loosen residue, add or not add water, make the second time pressing. Pressed juice has heavy mixed flavor, low quality, should be used for distilled liquor or other usage. The device generally is continuous screw press.

Juice clarification

Dry wine is suitable 0.6%-0.8%, sweet wine is suitable 0.8%-1%.Generally, if PH>3.6 or titratable acidity lower 0.65%, it should add acidification to fruit juice.

Fermentation Process

Fermentation is divided main (previous)fermentation and secondary fermentation. In main

Formation process, put fruit juice into vessel, meet 4/5 of vessel volume, adding 3%-5% yeast, stirring uniformity, control temperature 20-28,fermentation time change by yeasty activity and ferment temperature, often 3-12 days.

 

Disabled sugar down to less than 0.4%, main fermentation is end. Then proceed secondary fermentation, wine vessel is airtight at once, stay in 12-28condition about one month. After finish fermentation, proceed clarification, clarification method is the same as fruit juice.

Finished product blend

1.Fuit wine blend is mainly has blending and adjustment. Blending is raw wine mixed in proper proportion. Adjustment is according to quality standard to adjust a certain composition of blend wine.

 

Blending, often choose one kind of almost standard quality of raw wine to foundation raw wine. According to its shortcoming to choose one or several other wine to blend, add some proportion wine, proceed sense organ and chemical analysis, accordingly make sure proper proportion.

 

Fermentation and ageing wine

The inner of the tank body is polished whose precision can be reached to 0.4um, so it is easy to clean and wash the tank body and keep the biological stability during the every processes of making wine etc.

 

The temperature of fermenters and ageing wine tanks are controlled by the refrigerant injected in the jacket cooling by miller plate jacketed design which owns a high effective ratio of heat transfer and a high precision of temperature of control, thus can keep the wine quality also.

Technical Pipeline Design

The pipelines are adopted with a normative and reasonable stainless steel channel design, and connected with tube sheet and pipe gallery, so it is easy to applied and avoid the intruding of hazardous substance, such as plasticizer, and thus can insure the safety of the food.

Electric Control

The control equipment are designed with IPC, PLC and touch screen patterns, own semi-automatic and full-automatic type of control, you can choose your like type to use.

Filter, Sterilize, Bottle filling

Filtering include DE filter, sheet filter and member filter etc.

 

The fruit wine always use bottle filling, the empty bottle should be in the alkali solution in 50?for soaking and then clean and dry it for sterilizing.

 

The fruit wine should first use pasteurization and then to the bottles, if the alcohol is low, the bottled wine should sterilize for the second time, also can be bottling directly, different wine has different craft.
