ε-Polylysine is to serve as antimicrobial agent or preservatives. It is used to food, cosmetics, personal care, disinfection products by preventing growth of microoganisms.
ε-Polylysine is a homopolymer of Llysine, one of the essential amino acids. It is prepared from a fermentation for process using Streptomyces albulus under aerobic condition.
Physiochemical Properties of Bio food additive preservative e-polylysine
ε-Polylysine is a pale yellow powder, with strong hygroscopicity (absorbs water), and slightly bitter taste. It is easily soluble in water and weak hydrochloric acid (HCl), but not in organic solvents such as alcohol, or ether. Its isoelectric point is 9.0, specific rotation [α] is +57.1°(c=1, H2O), [α] is +39.9°(c=1, 5, mol/L HCI)
