Sushi ginger is called gari or amazu shoga in Japanese. It's served with sushi or sashimi and eaten between different kinds of sushi. Normally used to cleanse the palate between different types of sushi, so you get the full flavor of each of sushi. 

 It's sweet, thinly sliced young ginger that has been marinated in a solution of sugar and vinegar. Usually, size is 0.8-1.0mm.
