White Tea

White tea was exclusively produced in the Chinese province and is said to be the original tea. Interestingly, all four major types of tea (black, oolong, green and white) come from the same tea plant, Camellia sinensis.

 

The distinction between the categories of tea is in the method of processing the tea leaves. White tea is the uncured, unoxidized tea leaf. It consists of the bud and two young leaves and once harvested undergoes only the processes of withering and drying.

The result is a pale liquor with a fresh and subtle taste – lightly sweet and delicate. White tea requires longer infusions - up to 15 minutes. This is a treat for connoisseurs.

White teas are very lightly oxidised. the leaves and buds grown for white tea are actually picked the day before the shoot open, which is attributed to the delicate nature and subtle qualities of white teas.

White tea to have a greater concentration of polyphenols than green tea and therefore have strongest anti cancer potential of all teas.

Two recent studies, at Louisian's Pace University and Oregon State University, found that white tea is most benificial of all brews, rich in cancer fighting antioxidants and capable of boosting the body's immune system even more than the green tea.
