Food grade sodium carboxymethyl cellulose can be use to replace Guar gum, Gelatin, Agar-agarand Sodium Alginate by its various function including thickening, emulsifying, body-structuring, and stabilizing, etc.

It can reduce production cost, increase food quality, improve mouthfeel or freshness, extend shelf life, and is one of the essential food additives in the food industry.

Food grade sodium carboxymethyl cellulose has been widely used in frozen foods, canned foods, candy, biscuits, meat, snacks, noodles, instant foods, ice cream, jams, salad dressings, sauce and all kinds of liquid beverage, like milk, yogurt, juice, soft drinking and liquor.

Physicochemical Properties

a)Appearance: White or light yellowish fiber powder or white powder with characteristics of odorless, tasteless and non-toxic.

b)Solubility:

-Soluble in cold or hot water to form a gel, the solution is neutral or slightly alkaline.

- Insoluble in ethanol, ethyl ether, isopropyl alcohol, acetone and other organic solvents.

- Soluble in ethanol or acetone solution of 60% moisture.

c)-Physical Property: Hygroscopicity and stability to heat and light.

d)- Viscosity: Viscosity decreases with temperature increase.

e)-Solution PH value:

Stable when solution PH value arranged 2 to 10

Solid precipitates when solution PH less than 2

Viscosity reduce when solution PH higher than 10

f)Color-change Temperature: 227

g)Carbonization Temperature: 252

h)Surface Tension: 71 mn/n in 2% aqueous solution.

Product Uses

CMC is used as stabilizing of acid drink due to its unusual characteristic and superior quality. It has following characteristics:

1) Prevent protein in acid milk from condensing, settling and laminating.

2) Due to its unusual smooth sugar paste after it dissolves, it make drink taste good and smooth.

3) Its good evenness and acid resistance provides drink with excellent stability.

Furthermore, CMC is used in ice cream to make water, sebum, protein to form a mixture which is stable and well dipersed. At the same time, it tastes good, smooth and has good formability.

Used in bread and cakes, CMC can control paste viscosity and strengthen water taking and keeping.

Used in instant noodles, it increase toughness and cook-resistance; used in biscuits and cakes, it becomes better in formability, crisp and fragrant;

Used in instant eatable paste such as peanut paste, sesame seed paste and mixed rice pudding, it works as a paste base. When making low-heart food, you can use CMC because it has no heat itself.
