Production Methods
The sake is made only from carefully selected and domestically sourced rice and water.
The rice that is used is a variety that has been developed specifically for sake.
The soft water (Gassin spring water) that is used produces a sake that is also soft and gentle.
It is through the processes of rice milling ⇒ cleaning ⇒ fermentation ⇒ filtration ⇒
heat sterilization that rice and water become sake.

TOHOKU-IZUMI (Yuza-machi) | Established in 1902. It names in a meaning called the alcohol brewed the water of "TOHOKU" pellucid "IZUMI(spring)". It is located in a border between prefectures with Akita Pref., and the Chokai Mt. subsoil water is used for preparation water. TAKENOTSUYU (Tsuruoka City) | Established in 1858.TAKENOTSUYU located in the foot in Haguro Mt. Published also at Michelin Guide. Use local rice in Haguro. Using "Gassan-hukuryusui" for preparation water, the character is alkali super-soft water.
